Tried making my version of paneer biryani. But it came out to be too yumy and royal. I used 2 mixtures here. One is cooked along the rice, and the other mixture is mixed along the cooked rice again. This is quite a pampered recipe where you need to prepare 2 way of mixture of masala. But the end result when you have the panner biryani, it taste better than any other outdoor resturant biryani. Try this and let me know whether you liked it :)
Paneer - 15 small cubes, fried previously and kept aside
Mixture 1:
1 onion finely chopped
Methi leaves - 1/2 cup tsp finely chopped
garlic 4 pods smashed
1 cinnamon stick 2 "
1 star anise
1/2 tbsp turmeric powder
3 pods cardamon (powdered well)
3 cloves
1 small tbsp ajwain
Method 1:
Fry garlic till raw smell goes, add cinnamon, star anise, cardamon, cloves, ajwain, turmeric powder; fry well all these spices for 2-3 mins.
Now add methi leaves & onions, fry onions to golden brown, add the basmasti rice and fry along the mixture well, now add 4 cups of water , salt to taste.
Add a tbsp of ghee and cook the rice till done and see that the rice is not over cooked.
When done, spread the rice on a wider vessels(this is to avoid over cooking of rice & they don't stick to each other, and to make the rice cooler) , covering a lid over it & keep aside.
Now go for the next Method 2 as below.
Mixture 2:
Cumin Seeds - 1 tsp
Ginger Garlic Paste - 3 tsp
Onions - 3 medium, sliced
Tomatoes - 1 chopped fine
3 green chilli finely chopped
Beans - 1/2 cup, chopped very fine
1 tbsp soya sauce
1 tbsp chilli sauce
1 tbsp kasturi methi
Coriander Powder - 1 tsp
Garam Masala - 1/2 tsp
1/2 tbsp turmaric powder
Biryani Masala - 1 tsp (I used "Bon" masala)
Salt to taste
Method 2:
- Take a deep bottom vessel, add 4 tbsp oil, fry the cumin, ginger garlic paste, green chilli, coriander powder. turmaric powder and fry for a minute or two.
- Add onions fry till transparent, add the tomato, fry well till it cooks, now add the beans, and fry under medium flame for 3-4 mins.
- Now add soya sauce, chilli sauce, kasturi methi, garam masala powder, biryani masala fry well for 2-3 mins by mixing all the contents well.
- Add the fried paneer, coriander leaves and toss well for a minute, now add the cooked basmati rice, and fry well along this mixture.
- Add salt if needed according to the taste.
- This is a pampered recipe, but believe me it tastes too yumm..
- Serve hot along cucumber , onion raita and other side dish.
