Alphabet Pasta

Kids will love to recall spelling out his or her name in steaming bowls of alphabet pasta. For me it is an enduring memory of good comfort food from home, especially I loved making it and also same time enjoyed it for evening tea along family. In this simple pasta, tiny alphabet pasta is cooked in boiling water with little of salt & vegetable oil added into it. The secret to the pasta to stay nonsticky is run it along cold water and drain off excess. Finally mix along with a little of vegetable oil. You can also keep this way cooked pasta in fridge and make whenever needed.

Tangy Tomato Garlic Tube Pasta

One of the easiest pasta that I cooked. This tube macaroni gets cooked for 9 to 10 minutes. Kids will surely relish its tangy tomato flavor. You can also add your choice of vegetables into it. But make sure they remain crispy. Even egg scramble can we tossed along it, for people who love egg along pasta, it tastes still more yummy. Try making this for morning breakfast or during your evening tea. Enjoy!

Tube macaroni - 1 pck

3 onions finely chopped
2 tomatoes chopped
4 green chillies
1 capsicum chopped
8 garlic flakes crushed
Ginger 1" crushed well
2 strands of chopped curry leaves
3 cloves, 2 pod cardamon powdered 
1 tbsp garam masala powder
1 tbsp ajwain
1 tbsp soya sauce
1 tbsp chilly sauce 
  • Cook the Macroni in 5 cups of water, add little salt and a tbsp of oil. Drain water from the macaroni and keep aside, (you can add some cold water while draining, this will stop the further bulging of macaroni)
  • Take a vessel, add 4 tbsp oil, fry the ajwain, cloves, cardamon, ginger-garlic,green chilli, curry leaves. Fry till the raw smell goes.
  • Now add the onions, when it turns transparent, add the tomatoes and toss well till they are smashed well and cooked.
  • Now add the capsicum, garam masala powder, fry it for 2 mins.Add the chilli sauce, soya sauce, salt to taste and fry for a minute.
  • Now add the macaroni tubes, mix well and fry under medium flame for 3-4 mins.
  • Serve hot along tomato sauce or even you can have it plain.

Soyatein flat noodles

I really love Sunday morning breakfast with the family. Like many families, Sunday is our quiet, lazy day. I try to do something special for breakfast while we’re all preparing to enjoy the last few hours of our weekend. Today, I tried making noodles in special way. And it really turned out to be YUM!


Ingredients:

2 packet flat noodles
3 big onions chooped
4 medium tomatoes chopped
1 tbsp cumin seeds
1 small tbsp ajwain
1 star anise
2" cinnamon bark
1 fist full of finely chopped cilantro leaves
1 tbsp Kasturi methi 

5 green chillies fiely chopped
1 tbsp garam masala powder
1 tbsp chat masala podwer

Toast (rusk) pieces
salt to taste


  • Soak soyatein in warm water for 5 mins, then its to remove excess water and keep aside. Cut toast into small cube pieces and keep aside.

  • Fry star anise, cumins seeds, ajwain, cinnamon for 2 mins in 4 tbsp oil, add 4 chopped garlic, green chillies (3 no'), tomato and little of salt; fry well till tomato becomes little saucy texture. Now add kasthuri methi and fry for 2 min more, finally add finely chopped cilantro; saute well for a minute and keep aside.

  • Cook the flat noodles in enough of water, adding 1 tbsp oil and salt to taste. cook for around 5- 8 mins. Drain off the excess water, plunge it in cold water (this is to avoid sticking of the noodles & also to avoid further cooking of noodles due to heat). Mix the noodles along little of oil and keep aside.
  • Take a wok, fry the remaining garlic , green chillies and toss it along onion. When onion is transparent, now add 1tbsp of garam masala powder and fry for 2 mins more. Add salt (see that you balance the salt)

  • Add the Soyatein chura's and fry well for 3-4 mins, till the masala blends well.
  • Add the noodles and fry for 5-8 mins under medium flame.
  •  Now add the tomato masala which was previously prepared, rusk (toast) pieces. Mix well and fry for 3 mins more. Add chat masala powder, saute well.
  • Serve along tomato sauce.

Macaroni Tomato Pasta my way!

 Italians are known to eat a lot of pasta, but the Spanish eat their fair share as well. They may not be known for their pasta dishes, but macaroni, rigatoni, penne and spaghetti are often eaten in Spanish homes with a typically Spanish twist to the sauce. As in Italy, in Spain pasta is considered a first course rather than a main course. I have tried making pasta my way, after reading few recipes; however this recipe will serve 5 adults as a main course. Please try making it on weekends, am sure your gonna enjoy it!!
 
2 cups of macaroni
3 finely chopped onions
6 garlic flakes finely chopped
3 green chillies finely chopped

Coriander finely chopped

Tomato paste: (grind the below ingredients to fine paste without using water)
Parboil the 
chopped tomatoes 5 no' with pinch of salt without water (cool them)
1 medium cinnamon piece (roasted)
6 red chillies, less spicy once (roasted)
2 tbsp acetic acid/ vinegar (choice)
6 cashews 

4 garlic flakes, 1 small ginger piece
Small tbsp mustard (roasted)
3-4 stalk of curry leaves (roasted)
1tbsp sugar



Method:
  • Cook Bambino short Macaroni in boiling water for 8 minutes, add cold water, drain and keep aside. Add a little of oil and mix well (to avoid sticking of the macaroni).
 
  • Take a vessel, fry the garlic, add onions, green chillies.
  • When onions turn slightly transparent, add the tomato paste. 
  • Fry well under medium flame, till you see oil leaving the sides.
  • Add the cooked Macaroni and mix well under high flame for 3-5 mins.
  • Add salt if needed. Sprinkle with finely chopped coriander leaves.
  • Serve hot along Tea...

Veggie Paneer Macaroni

2 1/2 cups of macaroni, 2 onions finely chopped, 2 fine chopped, 1 tbsp jeera (cumin), 1/2 tbsp ajwain, 3 green chillies finely chopped, 1 capsicum & 1 carrot sliced longitudinally, coriander leaves, 1 tbsp chat masala powder, 1 tbsp garam masala powder, fried paneer cubes, salt to taste.

Method:
  • Cook Bambino short Macaroni in boiling water for 8 minutes, drain and keep aside. Add a lilltle of oil and mix well (to avoid sticking of the macaroni).
  • Heat oil, fry garlic, jeera, ajwain and ginger till fragrant. Add green chillies and onion, fry onion til transparent brown, add tomatoes and saute well till they blend well with the content.
  • Add carrots, capsicum (you can use any vegetable of your choice), chat masala, garam masala powder. Fry under medium flame for 5 mins.
  • Add cooked Bambino macaroni, mix ingredients and continue to fry for another 5 minutes.
  • Add fried paneer pices and mix well, add salt if needed. Garnish with spring onions,chopped coriander leaves.
  • Serve hot.
