Soyatein flat noodles

I really love Sunday morning breakfast with the family. Like many families, Sunday is our quiet, lazy day. I try to do something special for breakfast while we’re all preparing to enjoy the last few hours of our weekend. Today, I tried making noodles in special way. And it really turned out to be YUM!


Ingredients:

2 packet flat noodles
3 big onions chooped
4 medium tomatoes chopped
1 tbsp cumin seeds
1 small tbsp ajwain
1 star anise
2" cinnamon bark
1 fist full of finely chopped cilantro leaves
1 tbsp Kasturi methi 

5 green chillies fiely chopped
1 tbsp garam masala powder
1 tbsp chat masala podwer

Toast (rusk) pieces
salt to taste


  • Soak soyatein in warm water for 5 mins, then its to remove excess water and keep aside. Cut toast into small cube pieces and keep aside.

  • Fry star anise, cumins seeds, ajwain, cinnamon for 2 mins in 4 tbsp oil, add 4 chopped garlic, green chillies (3 no'), tomato and little of salt; fry well till tomato becomes little saucy texture. Now add kasthuri methi and fry for 2 min more, finally add finely chopped cilantro; saute well for a minute and keep aside.

  • Cook the flat noodles in enough of water, adding 1 tbsp oil and salt to taste. cook for around 5- 8 mins. Drain off the excess water, plunge it in cold water (this is to avoid sticking of the noodles & also to avoid further cooking of noodles due to heat). Mix the noodles along little of oil and keep aside.
  • Take a wok, fry the remaining garlic , green chillies and toss it along onion. When onion is transparent, now add 1tbsp of garam masala powder and fry for 2 mins more. Add salt (see that you balance the salt)

  • Add the Soyatein chura's and fry well for 3-4 mins, till the masala blends well.
  • Add the noodles and fry for 5-8 mins under medium flame.
  •  Now add the tomato masala which was previously prepared, rusk (toast) pieces. Mix well and fry for 3 mins more. Add chat masala powder, saute well.
  • Serve along tomato sauce.
