Yummy Pudina Chicken Curry



Ingredients:
1kg chicken
1 cup curd
2 tbsp garlic ginger paste
2 medium onion chopped
1 medium Tomato chopped
2 medium tbsp chopped garlic
1 tbsp cumin seeds
1 tbsp saunf (Powder it partially using pestle & Motar)
1 1/2tsp Pepper powder
2tsp Coriander powder
1 tbsp Kasturi Methi
1/2 tsp garam masala powder
salt to taste


Masala Paste: Roast the below ingredients with a little of coconut oil one by one and grind to a fine paste.
1/2 Coconut grated
12 Red Chillies
1 cup Pudina leaves
6 sprigs of cilantro(corainder) leaves
1 spring Curry Leaves
1tsp Shahi Jeera
2 Cloves
1 inch Cinnamon Stick
Coconut oil
1 small tbsp turmeric powder


Method:
  • Marinate the Chicken with 1tbsp Ginger-garlic paste, curd and salt. Marinate this mixture for atleast 1hr in refrigerator.
    Heat 4tbsp oil in kadai and add 1 tbsp cumin seeds, saunf, let them sizzle, next add the chopped garlic and saute well.
     

  • Then add the onion and saute till it turns transparent for a while and then add the remaining 1 tbsp Ginger-garlic paste. Stir fry for 2 mins.
  • Now add the chicken, followed by tomato and stir fry wel.
  • Close the lid & allow the chicken to cook in its own liquid along tomatoes under low flame for 15 mins.
  • After 15 mins of cooking, add coriander powder, pepper powder, garam masala powder, kasturi methi leaves & stir fry well for 5 mins under medium flame.
  • Add the ground paste, mix well and adjust the salt if needed. Bring the curry to a boil in between give a stir.
  • Switch off the flame , garnish the curry with chopped coriander leaves.
  • Enjoy this delicious curry along Chapati/nan/parata/dosa/idli or rice :)
