Rich Choco-Pineapple Cake

A very HAPPY NEW YEAR to all my Blog readers!! I made this New Year eve an easy one bowl Choco-Pineapple Cake. To my surprise it was soft-spongy, and the choco-pineapple flavor was well balanced as pineapple along with the added dry nut is well jelled along the cake!! Its very easy & simple, you need 10 mins for preparation (if all ingredients are near you is better) 40 mins for baking, and 10 mins for setting aside.
 

Ingredients:
1/3 cup butter, softened
2 cups maida (cake flour), sifted before measuring
1 1/4 cups granulated sugar

1 cup finely chopped pineapple (choice)
2
tbsp baking powder
1 small tbsp salt
1/3 cup butter wiped in chocolate (melt the chocolate bar 2 medium choco bar)
1/2 cup milk
3 eggs
 
5 tbsp Cocoa powder
1/2 cup each of raisins and cashew nut pieces
1 Choco bar melted for last decoration (topping)

Preparation:
  • Mix well the softened butter along melted chocolate.
  • Add the beaten egg, and wip well.
  • Add the finely chopped pineapple pieces and mix well ( I have added pineapple here instead of vanilla extract, as it gives good aroma and fruity flavor to the cake).
  •  Add the cocoa powder and mix well, see that you avoid clumping. So better is to add a table spoon full each time with continuous mixing.

  • Add raisins, cashew nut pieces, baking powder, milk (I have added chilled raw milk), granulated sugar and mix well.

  •  Add maida little by little and mix well each time, avoid clumping of the flour.
  •  Grease paper with butter well and set it well in the aluminum vessel.
  • Spread well the cake mixture into the vessel, set the pressure cooker before hand for 15 mins under medium flame.
  • Place a meshed vessel inside the bottom of cooker, now keep the aluminum vessel above it and bake for 40 mins under semi-medium flame. After which switch off the burner and keep the cooker for 10 mins.
    Cake ready after baking!
  • Transfer the cake to a plate to give your desired shape cutting and decoration!
  • I spread the melted choco cream over as a topping, and kept the cake aside for setting for 10 mins
  • It is very simple, yet worth making at home.. This time I didn't do the icing of cake, as we were all eager to eat it :P  
  • I had an idea of soaking the cake in chilled dilute rum. This would indeed taste yum... Well next time am gonna try different variations for sure!!
