Mixed Veg Pulao

Mixed Veg Pulao is a very easy recipe. I saw few vegetables in refrigerator. So felt like taking small amount of each to make a veg pulao. Here the pulao is pressure cooked so all the vegetable nutrients blend well along rice.


Basmati Rice – 4cups, Oil – 3 tsp, Salt to taste, Cinnamon  -1, Cloves – 3, Bay leaves – 2, Cashew nuts – 1/4cup, Raisens - 1/4 cup, Poppy seeds – 4tsp, Ginger -1″ piece, Garlic – 5 pods, Green chillies – 4


Vegetables:
Carrots – 1cup, Potatoes – 1cup, Green peas – 1cup, Onion – 1, Cauliflower florets – 1cup, Beans – 1cup
[you can use any vegetable of your choice]



  • Wash and soak the rice,before you start with the vegetables, this makes the rice fluffy and makes the rice cook faster.
  • Chop onion and other vegetables.
  • Grind the green chillies, poppy seeds along with ginger and garlic into a smoothe paste.
  • Heat oil in a wide saucepan add the remaining spices and onions and saute.
  • After the onions are done add the remaining vegetables ,the above ground spices and salt , cover the sauce pan and cook for 10mins.
  • Add the soaked rice and mix till the rice and vegetables blend well.
  • Transfer the whole to a pressure cooker and add water for the rice [1cup rice - 2 cup water]  and vegetables.
  • After 1 whistle switch off the burner and keep the cooker aside [Don't go beyond one whistle else the rice gets over cooked in steam]
  • Garnish with chopped coriander leaves , add fried cashew , raisen along  2 tb sp ghee & mix well.
  • Serve with Raita or veg kurma.
