Veggie Paneer Macaroni

2 1/2 cups of macaroni, 2 onions finely chopped, 2 fine chopped, 1 tbsp jeera (cumin), 1/2 tbsp ajwain, 3 green chillies finely chopped, 1 capsicum & 1 carrot sliced longitudinally, coriander leaves, 1 tbsp chat masala powder, 1 tbsp garam masala powder, fried paneer cubes, salt to taste.

Method:
  • Cook Bambino short Macaroni in boiling water for 8 minutes, drain and keep aside. Add a lilltle of oil and mix well (to avoid sticking of the macaroni).
  • Heat oil, fry garlic, jeera, ajwain and ginger till fragrant. Add green chillies and onion, fry onion til transparent brown, add tomatoes and saute well till they blend well with the content.
  • Add carrots, capsicum (you can use any vegetable of your choice), chat masala, garam masala powder. Fry under medium flame for 5 mins.
  • Add cooked Bambino macaroni, mix ingredients and continue to fry for another 5 minutes.
  • Add fried paneer pices and mix well, add salt if needed. Garnish with spring onions,chopped coriander leaves.
  • Serve hot.
