Schezwan Chicken is one of the most popular Chinese dish drives it name from city of China. This dish is full of nutrition as it is prepared with combination of chicken, vegetables; and gravy of chicken stock, chili sauce, soya sauce and ketchup. You can serve it as side or main dish with boil rice and fried rice. I have added some Indian spice too, so it makes this dish Indochinese combo :P. I did not add vegetables while making this recipe as it was already late reaching home after a tiresome journey on Sunday. So just made a quick recipe which took me 30-35 mins and side ways the Ghee rice was prepared which was done in between the same interval, Isn't it quite quick when you are really hungry and want to have some heavy meal :P
Ingredients:
1 kg chicken (small pieces) [Marinate the chicken 10min in pepper powder, lemon juice & ginger garlic paste]
Cumin seeds 1 tbsp
Saunf 1 tbsp (crushed in pestle & motor)
3 star anise
1" cinnamon stick
4 cloves
6 green chilli
1 lemon juice (chicken marination)
Ginger garlic paste 3 tbsp (chicken marination)
Ginger flakes (smash it well using pestle & motor)
4 medium onions finely chopped
4 strands of curry leaves (chopped finely)
1 medium tbsp pepper powder (chicken marination)
2 packs of Schezwan powder
1 big tbsp Soya sauce
2 big tbsp tomato ketchup
Fistful of coriander leaves finely chopped
Salt to taste
Method:
- Fry all the spices one by one- Cumin, Saunf, star anise, cinnamon, cloves. When you smell the aroma of spice add the chopped onions.
- Fry the onions well until they turn transparent brown.
- Now add the marinated chicken, stir well. Add little of salt around a tbsp only and mix well. Close the vessel with a lid & keep the chicken to cook for 10 mins under small flame.
- After 10 mins you see the chicken has left its water, now add the smashed garlic green chillies and mix well. Leave it to cook for another 5 mins closing the lid.
- Later add 1 tbsp of soya sauce, 2 tbsp tomato ketchup & Schezwan Masala Powder and mix well. Keep stiring the content for 5 mins under big flame.
- Now add the finely chopped coriander leaves and serve along meals/ fried rice or ghee rice.
