Chilli Chicken

Chilli chicken recipe comes in different ways. Sometimes the chicken is fried and made in Indo-chinese style, where it is added along with rest of sauces and spices. Other way of making Chilli chicken is it is marinated and cooked along few spices and lastly a heap of green chilli is added. The added green chillies gives aroma as well spiciness to the recipe. It is a very easy recipe and preparation time is 25-30 min, if u got all the ingredients ready and handy.


Ingredients:
1/2 kg Chicken pieces
4 tbsp chilli powder
1 lemon juice
1 tbsp turmaric powder
1 tbsp pepper powder
3 star anise
2" cinnamon stick
4 cloves
2 tbsp Cumin seeds
1 tbsp saunf (powder it coarsely using pestle & mortar) 
4 onions finely chopped
8 garlic flakes 
2 tbsp Karturi Methi leaves
1 tbsp garam masala powder
Salt to taste
8 green chlli slit into 4 each
2 tomatoes finely chopped



Marination: Marinate the chicken with chilli powder, tumaric powder, lemon juice and little of salt. Mix well and keep aside. By the time this gets marinated start proceeding with masala making.


Method:
  • Take a wider vessel, fry cumins, cinnamon, saunf, Cloves, Star anise, when you smell the aroma of the spices, add the onions and fry it till golden brown.
  • Now add the Kasturi Methi leaves, fry for 2 mins, followed by garam masala and pepper powder. Saute well for 2 mins more.
  • Now add the marinated chicken, chopped tomatoes , salt as per your taste and mix well and keep the chicken to cook in low flame for 15 mins, closing with a lid. [In between see that u stir the content in each 5 min break, to avoid charring of chicken to the bottom or else better is use a non stick vessel]
  • After 10 mins you see that the chicken has left water. [Here i haven't added any water while cooking chicken, the chicken gets cooked in its own liquid & it really taste yummm]
  • Now add the slit green chillies and smashed garlic. Keep the flame in medium and stir well.
  • Now cook it for another 5 mins. Adjust the salt if needed. And garnish with few green chilli finely chopped (this is choice if you want to add green chilli for second interval, you can also add curry leaves, as it also gives lovely aroma to the dish).
  • When done, serve along meal as side dish.
