Baby corn Paneer Capsicum Masala

Baby corn – 3 sticks, capsicum -1, paneer 100 gm, onion – 2, Tomato – 1, ginger garlic paste – 1-2 tssp, 1 tb sp jeera, 1/2 tb sp ajwain, Turmeric powder – a pinch, garam masala powder – 1 tbsp, Coriander seeds– 2 tbsp, Grated coconut – 5 spoons, Curry leaves – a few, Salt to taste.

Cut Baby corn, Capsicum, paneer into small medium pieces and shallow fry it on high flame to golden brown and keep aside.

Masala paste: Grind grated coconut, fried onions 1/2 , fried garlic 2, tomato 1 small, 2 tbsp roasted coriander to fine paste and keep aside.

  • Take a kadai, fry jeera 1 tbsp, 1/2 tbsp ajwain, garlic-ginger paste, green chillies, chopped curry leaves, chopped onions fry till onions is golden brown.
  • Now add the masala paste and stir well on high flame.
  • When it comes to a boil, add the fried paneer, capsicum, baby corn and stir well.
  • Garnish with finely chopped coriender leaves. 
  • Serve hot along chapati/naan/parathas. Also goes well along rice items.
