Chicken Tikka Biryani

Chicken Tikka Biryani can be prepared by cooking chicken at botton along the marinade masala, with the partial cooked basmati on top; other method would be frying the chicken tikka separate and serving along the dum biryani. I tried making a spicy masaledar Tikka Biryani, where the fried Tikka served along was a well pondered combination. Nothing could beat it!!! It was just a finger licking Biryani :P Try one for a weekend & enjoy along your family. You can make it also for small family get together or functions.
Sunday meal included Sanna, Biryani by me... Chicken Sukha, Lady Fish pepper curry by Mom :) 




Preparation of Caramel Onions:
  • Fry the Onions adding 2 tbsp ghee till they are caramel color & keep aside.


Preparation of Dum masala rice:
2 cups Basmati Rice (Wash well, soak for 30 mins, then cook the rice & keep aside. I have cooked the rice to 90% here)
3 sliced onion
Spices (4 green cardamon pods, 1" cinamon stick, 1 Star anise, 4 cloves)
1 big tsp chopped Ginger
1 big tsp chopped Garlic 
1 tsp Green Chilli Paste
2 Tomato chopped
2 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tsp Roasted cumin powder
2 tsp Garam Masala Powder
1 tsp Coriander Powder
2 tbsp Green Coriander Leaves finely chopped
Salt to taste
4 tbsp Oil: 3 tbsp ghee for frying masala

Method:
  • Fry the Spices, when u smell the aroma add the onions and fry till tranparent.
  • Add the ginger-garlic, green chilli paste and saute well.
  • Add the tomatoes and fry for till the fry till it cook well.
  • Add the turmaric powder, cumin powder, coriander powder, garam masala powder, red chilli powder, salt to taste and saute well for 2-3 mins.

Preparation of Dum:
  • Take a Kadai, grease the bottom with ghee.
  • Layer alternatively with Rice=>Masala=>Rice=>Caramelized onion=>Rice=> till u follow same procedure followed by adding chopped coriander leaves. 
  • Keep it for dum for around 10 mins under medium heat.
  • When done serve along the fried Chicken Tikka.

Chicken Tikka Preparation:
Ingredience:
10-15 Chicken Pieces
4-5 tbsp Yogurt (curd) for making thick paste
1 tbsp vineger
Tikka masala
Ginger-garlic fresh paste 2 tbsp
Salt to taste
Oil for frying

  • Mix the above ingredients well and marinade the chicken piece long before preparation of Dum rice. (1 hour marination would be best).
  • Deep fry the chicken and serve along the Dum Biryani.
 A wholesome party time
