Beetroot Halwa my way!!

Beetroot is mostly an ignored vegetable by most people, might be due to its taste. Most of the kids, even adults hesitate to eat preparations made of Beetroot. But I must say it is highly nutritive & today, I am very much determined in sharing the nutritional value of Beetroot so that we do not miss a great source of nutrition in our diet. Please include beetroot on weekly basis in your diet.

Beetroot contains folate, potassium and manganese. The green leafy tops are highly nutritious as they contain calcium, beta-carotene and iron. The red pigmentation of Beetroot contains some anti-cancer elements and hence have been used to treat cancer too. This is one of a kind vegetable which contains high nutritional value and less calories.
 Grated Beet

Beetroot 4 small - grated
Sugar - 1/2 cup (add as per your taste)
Ghee - 3-4 tblsp
1 cup milk
Cashewnuts - 2 tblsp chopped, raisens 2 tbsp. badam coursly ground powder
cardomom 6 pods powdered
1tb sp corn flour mixed in little water.
white roasted sesame seeds for garnish.

 
Method:
  • Fry the cashews, raisens, badam powder in ghee for 2 minutes.
  • Add  the grated beetroot and fry till the raw smell goes.
  • Now add sugar and mix well and saute for 3 mins more.
  • Add milk and cook till soft , add corn flour mixture to make it viscous, stir well for 2 mins more.
  • Add 1 tblsp of ghee just before removing from fire.
  • Garnish with remaining fried cashewnuts and sesame seed.
